Citrus 2013 (Professional Taste Award)
From the kitchen of Gaynell Ferguson
Ingredients:
1 (18 1/2 ounce) package orange cake mix
1 (3 1/2 ounce) package vanilla instant pudding mix
4 large eggs
3/4 cup vegetable oil
Glaze
4 cups confectioners’ sugar
1/3 cup water
3 tablespoons vegetable oil
1 -2 teaspoon vanilla extract
Directions:
- Mix all ingredients and pour into mini muffin pans sprayed with nonstick vegetable oil. Bake in a preheated oven 350 degrees for 8-10 minutes.
- For the glaze, mix all the ingredients until smooth. Dip top of cupcakes in glaze and set on wire or wax paper to dry. Makes 8 dozen mini muffins!

 Ingredients:
4 large egg whites
1 large egg
3 cups of whole Wheat flour or Coconut flour
2 tsp. Cinnamon
¼ cup Apple sauce
2 Tbs. Butter Spread
¼ cup grapeseed oil
2 cups of well grated zucchini
1 tsp. Baking powder
1 tsp. Sea salt
The juice from 2 fresh squeezed DANDY Meyer Lemons
Directions:
- Preheat your oven to 375 degrees F
- Coat muffin tin with cooking spray
- Stir together all of your dry ingredients: Flour, cinnamon, baking powder, salt.
- Whisk together eggs, applesauce, grapeseed oil, lemon juice until smoothe. Add 2 cups of Zucchini
- Combine wet and dry ingredients together.
- Pour into muffin pan, fill ¾ of the way
- Bake in preheated oven for 20-25 minutes

 Ingredients:
1 Large egg, 5 egg whites
2 Tbs. Oil based butter spread
2 Tbs. Low-Fat Milk
3 Tbs. Water
¼ cup whole wheat flour
¼ tsp. Sea salt
1 tsp. Cinnamon
2 tsp. Vanilla extract
½ tsp. Baking powder
Directions:
- Preheat waffle iron.
- Lightly mix together eggs, butter spread, milk, vanilla, cinnamon, salt, water
- Add Flour and baking powder well until all lumps are blended.
- If too thick add 1-2 more Tbs. Of water or milk.
- Pour into waffle iron takes approximately 2-3 minutes to cook.
Clementine Compote
1.5 cups of frozen cranberries
2 medium DANDY red grapefruits, peeled and sectioned
1 tsp. Ground cinnamon
½ tsp. Ground nutmeg
½ cup of fresh squeezed DANDY clementine juice
Zest from 1 DANDY clementine
Directions:
- Place all of the ingredients into a saucepan, medium to high heat 10 minutes

 Frozen whole grain or wheat deep dish pie crust (prepare as directed)
3 pounds sliced Red Delicious & Granny Smith apples (can peel or leave skin on for texture or even do half & half)
½ cup raw cranberries
2 Tbs Stevia
1 tsp. Cinnamon
1 tsp. Nutmeg
1 tsp. Wheat flour
Pinch of Salt
1 tsp. Butter
Directions:
- Mix all of your ingredients together and place inside of your pie shell
Topping
1.5 Tbs dry Oatmeal
2 tsp. Brown sugar
1 tsp. Wheat flour
Directions:
- Place in 425 preheated oven for 40-50 minutes
- Cover crust with foil
