Serves: 4
Ingredients:
2 cups Watermelon
2 cups Cantaloupe
2 cups Honeydew
½ Dandy Vidalia onion
2 Serrano pepper
1 bunch Basil
¼ cup Olive oil
Salt to taste
Pepper to taste
Directions:
- Prepare this recipe as if the melon were the tomato in a salsa. Skin and deseed all of the melons, dice them into a small salsa sized dice.
- Add melon to a large bowl. Next dice the onion and pepper into a similar or smaller dice.
- Mince the basil into thin strips. Add basil, olive oil, salt and pepper to the bowl. Mix thoroughly and enjoy as a side or topping for any summer BBQ.

Serves: 5-6
Ingredients:
2 ea Lime
¼ cup rice wine vinegar
¼ cup sugar
¼ cup olive oil
2 ea Jumbo carrots
3 ea Jalapeno
1 ea Dandy Vidalia onion
1 bunch Dandy Cilantro
Salt to taste
Pepper to taste
Directions:
- This salad is perfect to cool you down in the summer. Begin by adding lime juice, vinegar, sugar and olive oil to a Ziploc bag and shake.
- Shred the carrots and place them in the bag. Next slice the jalapeno into rounds, (remove the seeds if you don’t like spice!) and add to the Ziploc bag.
- Julienne the onion into thin strips and place in the bag. Finally season the bag with a few good pinches of salt and pepper, along with chopped cilantro.
- Refrigerate until cool and serve on a platter as a side dish. Enjoy!

Ingredients:
1 Dandy Vidalia Onion
1 fennel bulb
1 green apple
1 small head of Dandy Red Cabbage
1 Dandy Lemon
3 Tablespoons olive oil
Salt
Pepper
Directions:
- Add sliced onion, fennel, apple and cabbage (all vegetables) into bite sized slices in large salad bowl.
- Using a small, separate bowl, zest the lemon and squeeze the juice into the bowl. Add olive oil, salt and pepper. Whisk until a quick dressing comes together and pour over the vegetable bowl.
- Toss salad very well and refrigerate until ready to eat.
*Dinner idea: Top with grilled chicken or shrimp for a light dinner.

Ingredients:
1 Large carrot
1 Small cucumber
½ Dandy Vidalia Onion
½ Cup cherry tomato
1 Cup candied walnuts
1 Large head of Dandy Romaine or Dandy Iceberg Lettuce chopped
Dandy Sweet Vidalia Salad Dressing to taste
Salt to taste
Pepper to taste
Directions:
- Slice carrot and cucumber into long thin steaks. Lay the steaks flat and julienne into thin strips. Add to a large salad bowl.
- Julienne onion into thin strips and add to bowl.
- Slice tomatoes in half and add to bowl.
- Add candied walnuts to the bowl.
- Drizzle with salad dressing, salt and pepper to taste.
Sprinkle a pinch of salt and pepper into the salad bowl. Carefully add salad dressing tossing the salad simultaneously. Remember you can always add more dressing but you can’t take it away. Serve and enjoy!
