Ginger Clementine Pepper Salsa
Dandy Summer Recipe Contest Second Place Winner

Ingredients:

2 medium-size ripe Dandy Clementines, peeled and cut into bite-size pieces
4 red radishes, sliced 
3/4 cup yellow bell pepper, seeded and chopped
1 medium-size fresh jalapeno pepper, seeded and finely chopped
1/4 cp fresh snipped parsley
1-1/2 tablespoons fresh squeezed lime juice
1-1/4 teaspoons minced fresh ginger root
1/4 teaspoon salt

Directions:

In a medium-size bowl, stir together Clementine pieces, radishes, bell pepper, jalapeno pepper, parsley, lime juice, ginger and salt. Cover and refrigerate at least 1 hour (up to 6 hours) before serving, stirring a couple of times while chilling.

Serve salsa over grilled chicken or pork or as a dip with your favorite chips.

Radish Salsa

Ingredients:

2 medium plum tomatoes, seeded and chopped
1 cup Dandy Radish MiniSticks, coarsely chopped
2 tablespoons finely chopped red onion
1 large whole green onion, chopped
1 jalapeno pepper, seeded and finely chopped
Juice of 1/2 lime
Salt and ground black pepper
1/2 cup Dandy cilantro leaves, chopped

Directions:

  1. In a mixing bowl, combine all but the cilantro.
  2. Season to taste with salt and pepper.
  3. Mix in the cilantro. Serve immediately.

Makes 1 3/4 cup

Mexican Salsa Chicken Dinner

Ingredients:

4 boneless half breasts of chicken, optional skins removed
4 Dandy® clementines, peeled and diced
1 tomato, seeded and diced or ½ cup quartered small pear or cherry tomatoes
1 green onion finely chopped
½ jalapeno chili minced, seeds removed
*2 Tbsp. chopped cilantro leaves, flat leaf parsley or basil leaves can be substituted
2 Tbsp. toasted pine nuts
1 clove garlic, minced
½ lime, juiced
Salt and pepper to taste
Garnish:  4 cilantro sprigs or substitution of Italian parsley or basil leaf

Directions:

  1. Grill or bake chicken breasts with or without skin in your favorite style.  Takes about 15 to 25 minutes to cook boneless breasts. 
  2. Top with salsa. For salsa combine the above ingredients in a bowl.

Note:  When working with chilies it is a good idea to wear rubber gloves so the oil from the seeds doesn’t burn your skin.
