Meyer Lemon and Roasted Chickpea Hummus

Serves: 2-3


1 15 oz. can Chickpeas
2 cloves Garlic
2 each Dandy® Meyer Lemons
1 tablespoon Sesame seed paste
1 cup Olive oil
Salt to taste
Pepper to taste


  1. Turn your oven on to 400 degrees.
  2. Drain chickpeas from can and pat dry.
  3. Place chickpeas and garlic onto a roasting pan and drizzle with a bit of your olive oil.
  4. Roast chickpeas and garlic until aromatic and colorful.
  5. Place chickpeas and garlic into a food processor and pulse a few times.
  6. Add sesame paste, Meyer lemon juice and zest and continue to puree.
  7. Finish by slowly incorporating the olive oil.  Add salt and pepper to your desire and enjoy!

    It does sound delicious but one cup of olive oil sounds like way too much.
    Is it possibly a mistake?

    Hi Barbara,

    We recommend that you have at least one cup of olive oil on hand to both coat the chickpeas before roasting and to drizzle into the food processor when blending. We recommend that you drizzle the olive oil into the food processor until you reach the consistency that you like. If you like your hummus chunkier, you will likely need less olive oil. For a smoother finish, you will likely use most of the olive oil that the recipe suggests. Enjoy! -Allison
