Belgian Waffles with Clementine Compote

What You Need

Waffles

1 Large egg, 5 egg whites

2 Tbs. Oil based butter spread

2 Tbs. Low-Fat Milk

3 Tbs. Water
¼ cup whole wheat flour
¼ tsp. Sea salt
1 tsp. Cinnamon
2 tsp. Vanilla extract
½ tsp. Baking powder

Mandarin Compote

1.5  cups of frozen cranberries
2 medium Dandy® red grapefruits, peeled and sectioned
1 tsp. Ground cinnamon
½ tsp. Ground nutmeg
½ cup of fresh squeezed Dandy® clementine juice
Zest of 1 Dandy® clementine

Make It

 

  1. Preheat waffle iron.
  2. Lightly mix together eggs, butter spread, milk, vanilla, cinnamon, salt, water
  3. Add Flour and baking powder well until all lumps are blended.
  4. If too thick add 1-2 more Tbs. Of water or milk.
  5. Pour into waffle iron takes approximately 2-3 minutes to cook.
  6. Place all of the ingredients for compote into a saucepan on medium to high heat for 10 minutes.
  7. Pour compote over waffles, and enjoy!
