In a pitcher mix the celery juice, lime juice and simple syrup. Stir to combine. Fill four glasses with crushed ice. Divide the sweetened celery juice mixture between the glasses (about 3 ounces each). Add gin if using and fill the rest of the glass with seltzer (about 3 ounces). Garnish with a lime wheel and celery heart branch, which will double as your swizzle stick to stir.
