Corn and Peach Bruschetta Toasts

  1.  Preheat grill to medium heat; grease grate well. Grill baguette slices for 1 to 2 minutes per side or until lightly marked and crisp. Rub with garlic clove and brush with 1 tbsp oil. Grill Dandy Sweet Corn for 15 to 18 minutes or until grill-marked and tender.
  2. Place peach on grill, cut side down; grill for 3 to 4 minutes or until grill-marked. Let corn and peach cool slightly. Remove kernels from cobs and chop peach finely.
  3. Toss together corn, peach, remaining oil, vinegar, shallot, honey, salt and pepper. Stir in 2 tbsp basil.
  4. Top toasted baguette slices with burrata and corn mixture. Sprinkle with remaining basil.

Tips:

  • Substitute fresh mozzarella or Brie cheese for burrata if desired.
  • Add pieces of thinly sliced prosciutto to baguette slices if desired.
