Add the lemon juice, tahini, olive oil, water, and garlic to a food processor fitted with the S blade. Process until smooth with no visible pieces of garlic, about 2 minutes.
Scrape the bottom, tahini tends to get stuck there, and process again.
Add in the salt, cumin, and chickpeas.
Process until super smooth and creamy, about 4-5 minutes, scraping down the sides as needed.
Add in 1 tablespoon of everything but the bagel seasoning and pulse to mix. Serve topped with olive oil and more seasoning!
