Homemade Salad Dressings

Vinaigrette:

  1. Whisk all ingredients together. Enjoy!

Emulsification: (aka salad dressing base)

  1. Whip 1 egg yolk with Dijon mustard, then add all remaining ingredients except the olive oil. 
  2. Add the oil in a slow, steady stream in the bowl until smooth.
  3. If the vinaigrette "breaks" (the oil separates from the other liquids), then slowly whisk in another egg yolk.

Creamy Dressing:

  1. Add mayonnaise or Tahini to create desired thickness. For a bright and delicious creamy bleu cheese dressing, add in bleu cheese in the mixture!

Caesar Dressing:

  1. Add anchovy paste to the emulsification and parmesan cheese along with a few splashes of Worcestershire sauce. Enjoy!
