Homemade Dandy Salad Dressings
What You Need
Vinaigrette:
- 1 tbsp Dijon mustard
- 1-2 tsp Agave syrup OR honey, maple syrup, sugar
- 1 shallot, minced
- 1 healthy pinch freshly cracked black pepper
- 1-2 tsp sea salt
- 4 oz. lemon juice
- 2 oz. champagne vinegar OR white wine, red wine, rice vinegar
- 6 - 8 oz. olive oil
Emulsification:
Creamy Dressing:
- Mayonnaise
- Tahini
- Bleu cheese (if desired!)
Caesar Dressing:
- Anchovy paste
- Parmesan cheese
- Worcestershire sauce
Make It
Vinaigrette:
- Whisk all ingredients together. Enjoy!
Emulsification: (aka salad dressing base)
- Whip 1 egg yolk with Dijon mustard, then add all remaining ingredients except the olive oil.
- Add the oil in a slow, steady stream in the bowl until smooth.
- If the vinaigrette "breaks" (the oil separates from the other liquids), then slowly whisk in another egg yolk.
Creamy Dressing:
- Add mayonnaise or Tahini to create desired thickness. For a bright and delicious creamy bleu cheese dressing, add in bleu cheese in the mixture!
Caesar Dressing:
- Add anchovy paste to the emulsification and parmesan cheese along with a few splashes of Worcestershire sauce. Enjoy!
