Homemade Salad Dressings

What You Need

Vinaigrette:

  • 1 tbsp Dijon mustard
  • 1-2 tsp Agave syrup OR honey, maple syrup, sugar
  • 1 shallot, minced
  • 1 healthy pinch freshly cracked black pepper
  • 1-2 tsp sea salt
  • 4 oz. lemon juice
  • 2 oz. champagne vinegar OR white wine, red wine, rice vinegar
  • 6 - 8 oz. olive oil

Emulsification:

  • 1 - 2 egg yolks

Creamy Dressing:

  • Mayonnaise
  • Tahini
  • Bleu cheese (if desired!)

Caesar Dressing:

  • Anchovy paste
  • Parmesan cheese
  • Worcestershire sauce

 

Make It

Vinaigrette:

  1. Whisk all ingredients together. Enjoy!

Emulsification: (aka salad dressing base)

  1. Whip 1 egg yolk with Dijon mustard, then add all remaining ingredients except the olive oil. 
  2. Add the oil in a slow, steady stream in the bowl until smooth.
  3. If the vinaigrette "breaks" (the oil separates from the other liquids), then slowly whisk in another egg yolk.

Creamy Dressing:

  1. Add mayonnaise or Tahini to create desired thickness. For a bright and delicious creamy bleu cheese dressing, add in bleu cheese in the mixture!

Caesar Dressing:

  1. Add anchovy paste to the emulsification and parmesan cheese along with a few splashes of Worcestershire sauce. Enjoy!
