Preheat your grill to medium-high heat, 400º- 450º F. Alternatively, you can cook the corn in a grill pan on the stovetop.
- Roast corn on pre-heated grill and cook, turning every 2-3 minutes, until lightly charred on all sides, about 10 minutes total. Remove the corn from your grill and allow to cool 5-10 minutes. Once cool enough to handle, slice the kernels off with a sharp knife, discarding the cobs.
- To a large serving bowl, add corn kernels, sliced peaches, sliced cucumber, chopped cilantro, sliced jalapeno and feta cheese.
- Add vinaigrette and toss to combine. Serve immediately.
Cilantro-Lime Vinaigrette
- To a blender, add all ingredients and blend until the vinaigrette is smooth and emulsified.
