Bejeweled Celery and Fennel Salad

What You Need

  •  1/4 cup extra-virgin olive oil
  • 3 tablespoons fresh squeezed lemon juice
  • 1 tablespoon maple syrup or agave nectar
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 6 Dandy® Celery Sticks, sliced on the diagonal
  • 1 medium fennel bulb, trimmed and thinly sliced, 2 tablespoons fronds reserved
  • 2 mandarin oranges, peeled and segmented
  • 1/4 cup pomegranate arils

Make It

  1. In a small bowl, whisk together the olive oil, lemon juice, maple syrup/agave nectar, salt and pepper.
  2. Add the sliced celery, fennel and oranges to a large bowl. Drizzle on about half of the dressing and toss to coat. Add the reserved fennel fronds and pomegranate arils and toss to combine. Taste and add more dressing, if desired.
  3. This salad can be served immediately. Or stored in your refrigerator for several hours before serving.
