What You Need

BBQ Chicken Salad
  • 2 grilled chicken breasts, cubed
  • 2 tablespoons barbecue sauce
  • 6 cups Dandy® romaine hearts, chopped - about 3 romaine hearts
  • 1 cup cherry tomatoes or grape tomatoes, halved
  • 1 cup canned black beans, rinsed and drained
  • 1 cup Dandy® sweet corn kernels, about 1 each
  • 1/4 cup Dandy® Radish MiniSticks
  • Crushed tortilla chips or strips, for garnish
  • BBQ Ranch Dressing (recipe to follow)
BBQ Ranch Dressing
  • 1/3 cup ranch dressing (store-bought or homemade)
  • 1 1/2 tablespoons barbecue sauce

Make It

  1. Make the dressing by combining 1/3 cup ranch dressing with 1 1/2 tablespoons barbecue sauce.
  2. In a medium bowl, toss to combine cooked chicken breast with 2 tablespoons of barbecue sauce. Set aside.
  3. In a large serving bowl, combine the romaine lettuce, tomatoes, corn kernels, radish, and chopped chicken. Drizzle the salad with dressing, then toss to lightly coat the bowl. Top with tortilla strips.
