Dandy® Celery Mary Verde

What You Need

  • 8 oz. Celery Juice (fresh, approximately 2 lbs. Dandy® Celery branches, reserve hearts for garnish)
  • 6 Tomatillos (husk removed)
  • 2 Green Onions
  • ¼ Cup Cilantro Leaves
  • 2 Sprigs Oregano
  • 2 Garlic Cloves
  • 4 oz. Lime Juice (fresh, about 3 to 4 limes)
  • 1 tsp. Celery Salt
  • ½ tsp. Kosher Salt
  • ¼ Cup Green Salsa, jarred
  • 8 oz. Vodka (optional)
  • 8 Cherry Tomatoes, for garnish
  • 4 Queen Olives, for garnish
  • Tajin or Season salt as garnish
  • 4  Lime wedges, for garnish
  • Ice
  •  4 - 12 oz. Rocks Glasses

Make It

To Garnish: Use lime wedge to rim glass, dip wet glass rim into tajin or season salt. Add ice to glass. Using a bamboo skewer, place two Cherry tomatoes and an olive on 4 skewers.  Dandy® Celery Heart Branches in each glass; set glasses aside.

Before assembling juice, boil the tomatillos for 6 minutes in salted water and drain.

In your blender or juicer, combine the Dandy® Celery, tomatillos, green onions, cilantro, garlic, oregano, and blend for 1 minutes on high till liquefied. Strain through a Nut Bag and allow to drain for 4-5 minutes. In a pitcher, combine the juice mixture, lime juice, green salsa, celery salt and salt, stirring to combine. Fill four glasses with ice. If using Vodka, pour 2 oz. in each glass; pour in 6 oz. verde Mary mix and garnish with Cherry tomato and olive skewer, lime wedge as well as Dandy® Celery Branches.
