Grilled Halloumi Fatoush Salad-1

What You Need

  • 1 pkg Halloumi cheese
  • 2 Naan Style Flatbreads; brush with olive oil and season with salt & pepper
  • 1 head red or green leaf lettuce, washed and torn into bite size pieces
  • 2 branches Dandy® Celery, cut into ¼ inch slices
  • 1 6oz. bag Dandy® Radish Coins 
  • 2 ripe tomatoes, chopped or 1 cup cherry tomatoes, cut in half
  • 2 Petite Persian cucumbers, cut into ¼ inch coins
  • 1 small red onion, minced 
  • ¼ cup flat leaf parsley, leaves only
  • ¼ cup mint leaves, torn 
  • 3 tablespoons lemon juice
  • 5 tablespoons olive oil, separated 
  • 2 tablespoons red wine vinegar 
  • ¼ teaspoon dried oregano
  • Salt and Pepper

Make It

  1. If using a gas grill, preheat to medium-high, if using wood or charcoal, create a bed of hot embers. To prepare cheese, split the block in half, brush with olive oil and grill over a medium hot grill for 2-3 minutes each side. While grilling cheese, grill flatbreads for 1-2 minutes each side, watch carefully to avoid burning. Remove both and set aside. 
  2. In a large bowl, whisk together lemon juice, olive oil, red wine vinegar, dried oregano and season with salt and pepper. Add to vinaigrette - celery, radish coins, tomatoes, cucumbers, red onion, parsley and mint leaves. Toss gently. Cut cooled flat bread into bite size pieces and add to bowl, add lettuce and toss until well combined. Crumble grilled Halloumi over salad and serve.
