Once tortellini are cooked, cool them in an ice water bath or in the refrigerator overnight. To prepare salad, combine all of the ingredients in a medium mixing bowl and toss well. Portion the salad into individual containers to have ready to grab and go each morning or store in a large container and portion as necessary. Kids and adults love the simple fresh flavor and crunch of this easy back to school salad.
