Dandy Super Sweet Corn, Green Bean & Potato Salad

YIELD
Serves 4-6

What You Need

  • 4 ears Dandy Super Sweet Corn, stripped from cob
  • 4 Dandy celery branches, sliced
  • 1 pkg Dandy radish coins
  • 2 cups green beans, blanched
  • 2 cups mixed color marble potatoes, boiled till fork tender and cooled
  • 1 small yellow onion, thinly sliced
  • 2 teaspoons salt
  • 1 teaspoon cracked black pepper
  • 3 teaspoons Dijon mustard
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 cups baby kale, mustard greens or arugula

Make It

 

1. In a large bowl, combine the Dandy super sweet corn, celery, radish coins, green beans, potatoes and yellow onions.

2. In a separate bowl whisk together the salt, pepper, Dijon mustard, olive oil, and red wine vinegar.

3. Pour the vinaigrette over the salad mixture and toss to mix.

4. Add the greens and toss gently when you are ready to serve your salad.
