What You Need

- Juice of ½ lemon
- ½ teaspoon each of Kosher salt, black pepper
- 1/4 English hothouse cucumber, thinly sliced
- 4 slices multigrain bread
- 1 avocado, divided
- 4-6 leaves, Dandy Romaine Hearts
- 4 ounces Havarti Cheese, Dill Havarti or Mozzarella, sliced 1/4" thick
