What You Need

Corn Ribs

  • 4 ears Dandy Sweet Corn (1 tray pack)
  • 3 tablespoons extra-virgin olive oil, plus more for grill grates
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • sliced green onions or chopped parsley, for garnish (optional)

Hot Honey Butter:

  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons hot honey

Make It

Corn Ribs

    1. Prepare grill to medium-high heat, 400º- 450º F. Cut 1/2-inch off the ends of each cob of corn. Stand the corn upright then cut the corn into half then half again to make quarters to create “ribs.” Repeat with remaining cob pieces. Each cob will yield 4 "ribs"/16 total.
    2. To a large bowl, mix to combine garlic powder, smoked paprika, salt, pepper and cayenne pepper. Brush corn ribs with olive oil, and then toss in bowl with seasoning mix. Toss to fully coat corn.
    3. Place corn ribs on oiled grill grates; grill, kernel side down, until corn is charred and looks tender, about 6-8 minutes. Flip and grill other side for 1-2 minutes. Remove from heat.

Hot Honey Butter

    1. To a bowl, whisk together melted butter and hot honey. Drizzle hot honey butter over corn ribs, and garnish with herbs if using. Serve and enjoy.
