What You Need

  • 1 bag of Tortilla chips
  • 1-15 ounce can of black beans, drained and rinsed
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • ½ cup Dandy Sweet Corn Kernels, about 1 cob
  • ½ cup Dandy Ready Made Radishes, sliced thin - about 3-4 radishes
  • 2 cups pico de gallo (homemade or store-bought)
  • 1 jalapeño thinly sliced
  • Cilantro, to garnish
  • Scallions thinly sliced, to garnish
  • Cotija cheese, to garnish (optional)

Make It

  1. Preheat oven to 425°F
  2. Arrange half of the tortilla chips on a baking sheet. Top with half of the black beans, then half of the shredded Monterrey Jack and cheddar cheese. Repeat layering with remaining chips, beans, and cheese. Top with corn kernels.
  3. Bake until cheese is melted and gooey, about 5 minutes.
  4. Serve nachos topped with sliced radishes, pico de gallo, sliced jalapeño, scallions, cilantro and Cotija cheese, if using. Dig in!
