Clementine Lime Chicken Tacos

What You Need

  • 3 cups hot cooked shredded chicken
  • ¼ cup clementine juice (2 Dandy® clementines)**
  • 1 tablespoon lime juice
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 13-14 corn tortillas
  • olive oil, for frying tortillas

Optional toppings:

  • Dandy® Radishes, sliced
  • diced tomatoes
  • crumbled Mexican cheese
  • diced onion
  • chopped cilantro
  • lime wedges
  • hot sauce

Make It

1. Toss chicken in clementine and lime juice. Season with salt and pepper. Hold warm in oven while frying tortillas.

2. Fry tortillas quickly in olive oil until they are soft and pliable. Drain on a plate lined with paper towels.

3. Fill tortillas with chicken and optional toppings and serve immediately.

**Clementines can be juiced by hand or with a machine.
