Potato Apple Dandy Celery Hash

What You Need

  • 1 pound breakfast sausage
  • 4 cups Black Gold Red Potatoes, with skins, diced and steamed (see instructions below)
  • ¼ cup olive oil
  • 2 cups apples, with skins, diced
  • 1 cup Dandy celery, diced
  • ½ cup yellow onion, diced
  • ¼-½ teaspoon crushed pepper flakes
  • ⅓ cup 100% maple syrup
  • 1 Tablespoon rosemary, fresh, chopped
  • 1 Tablespoon sage, fresh, chopped
  • Salt and Pepper to taste

Make It

  1. In a large sauté pan over medium high heat, cook sausage until browned. 
  2. Remove the sausage from the pan and let drain on a paper towel. 
  3. Add olive oil, Black Gold Potatoes, apples, Dancy Celery, onion, pepper flakes, salt, and pepper to the pan, and sauté until the potatoes are browned and the apples and celery are tender (about 10 minutes). 
  4. Reduce heat to low and add the maple syrup and cooked sausage.  Stir and let cook for an additional 2-3 minutes or until sausage is warm. 
  5. Remove the pan from the heat add the herbs.  Top with egg when serving, if desired.
Easy steamed potatoes:
  1. Preheat oven to 400 degrees.  Place potatoes and 1 cup water in a baking dish. 
  2. Using foil, tightly cover the dish and puncture the foil with a fork in 4 small spots. 
  3. Bake for 30-45 minutes or until potatoes are tender and cooked through.  Remove the pan from the oven, and drain potatoes.
  4. Chill potatoes until ready to use.  (Can be stored in refrigerator for up to 3 days.)
