What You Need

Margarita
  • Lime wedge, for rimming glass

  • Kosher salt, for rimming

  • 1½ oz sweetened celery juice (see below)

  • 1½ oz blanco or reposado tequila

  • 1 oz fresh lime juice

  • Celery sprig and lime wedge, for garnish

  • Ice

Sweetened Celery Juice 

  • 4 celery stalks, chopped

  • 1 small serrano chili, seeded

  • ½ tsp maple syrup or local honey

  • ⅓ cup cold water

Make It

Instructions for Celery Juice:

  1. Blend all ingredients until smooth, strain through fine mesh or cheesecloth, and chill.

Instructions to Assemble Margarita:

  1. Rim a rocks glass with lime and dip in salt.

  2. In a shaker, combine 1½ oz celery juice, 1½ oz tequila, and 1 oz lime juice.

  3. Fill with ice and shake well for 15–20 seconds.

  4. Strain into a salt-rimmed glass filled with ice.

  5. Garnish with a celery sprig and lime wedge.
