Dandy® Super Sweet Corn & Buffalo Chicken Mac and Cheese
What You Need

1 lb. package of dried, cooked penne pasta, according to directions on package

4 ears Dandy® sweet corn, stripped off cob

1/2 cup sliced Dandy® celery

1 cup shredded cooked chicken meat

3 tbsp. butter
-
3 tbsp. all-purpose flour
-
1 1/2 cups whole milk
-
1 tbsp. Dijon mustard
-
1/2 cup parmesan cheese, finely grated
-
1/2 cup cheddar cheese, shredded
-
1/2 cup hot buffalo sauce
-
1/2 cup crumbled blue cheese

Make It

Preheat oven to 375 degrees.

Cook pasta according to the directions on the package and cool.

Melt butter and cook the Dandy® sweet corn in butter for 5 minutes. Add flour and cook over medium heat for 2 minutes. Add milk and Dijon mustard and cook for 4-5 minutes, until the mixture begins to thicken. Then add the Dandy® sliced celery, chicken, parmesan, cheddar cheese, and hot buffalo sauce and cook for 2 minutes. Add the cooked pasta and fold together. Transfer the mixture to an ovenproof casserole dish and bake for 15 minutes. Remove from the oven and top with blue cheese. Let rest 10 minutes. Serve hot.
