What You Need

Taco Meat

  • 1 tbs olive oil
  • 1/2 cup yellow onion, diced
  • 1 lb lean ground beef - or ground turkey or ground chicken
  • 1 15-ounce can black beans
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon black pepper
  • 8-10 1 or 2-oz snack-sized bags corn chips (Fritos), or Doritos 

Toppings

  • Dandy® Radish Ministicks
  • Dandy® Romaine lettuce, chopped - or iceberg
  • 1 cup Mexican-blend shredded cheese   
  • sour cream
  • diced tomatoes
  • chopped cilantro
  • jalapeno - optional

Make It

1. Heat olive oil in a medium skillet over medium-high heat. Add onion and sauté until translucent, about 5-7 minutes.
2. Add ground beef to the skillet, breaking up the meat with a spatula, until browned and cooked through. Drain and discard any excess liquid and grease.
3. Place skillet back on the stove and reduce heat to low. Add dried spices and canned black beans, and mix to combine and cook for 5 minutes, until fully heated through and simmering.
4. Assemble the walking tacos by opening the bags of chips and spooning in some of the cooked beef and bean mixture and your favorite taco toppings.
