Crab & Prosciutto Corn Fritters

What You Need

4 cups oil
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 egg, beaten
2 tablespoons milk
1/4 cup Butter, melted
Fresh kernels from 1 ear of Dandy® corn
1/8 green onions, chopped
1/8 cup red bell pepper, minced
2 ounces crab meat, steamed & diced
2 ounces prosciutto, diced

Make It

In a fry pan heat oil. In a bowl, mix flour, baking powder, salt & pepper. Add egg, milk & butter. Mix well. Fold in corn, onion, pepper, crab & prosciutto. Drop spoonfuls of batter into hot oil. Cook for 2-3 minutes per side until golden brown. Drain on paper towels. Enjoy!
