Grilled Salmon with Corn Salsa

What You Need

For the salmon:

  • 4 salmon fillets, skin on
  • 2 Tbsp olive oil
  • Lemon pepper to taste
  • Salt to taste

For the salsa: 

  • 4 cobs of Dandy® Sweet Corn
  • 10 oz cherry tomatoes, halved
  • 1 red onion, chopped
  • 1 clove garlic, minced
  • ¼ cup fresh cilantro, chopped
  • ½ lime
  • Salt and pepper to taste

Make It

For the salsa:

  1. Heat grill to medium-high. Grill corn until slightly charred. Remove corn from cob.
  2. In a bowl, toss corn, cherry tomatoes, onion, garlic, and cilantro until combined.
  3. Squeeze juice of half a lime into salsa and season with salt and pepper to taste.

For the salmon:

  1. Heat grill to medium-high.
  2. Rub fish with oil and season with lemon pepper and salt.
  3. Grill fish, skin side down, 4-5 minutes or until skin releases from grill surface
  4. Flip fish and grill until slightly pink. Top with salsa and serve.
