What You Need

  • 1 pound bulk sausage
  • 1 tablespoon olive oil
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 medium onion, diced
  • 3 ribs Dandy® celery, diced
  • 4 cloves garlic, minced
  • salt & black pepper to taste
  • 1½ cups long grain white rice
  • 1½ chicken stock
  • ¼ cup Worcestershire sauce
  • 1 tablespoon cajun seasoning
  • 2 bay leaves
  • ¼ cup chopped cilantro

Make It

  1. Add sausage to a skillet and place over medium heat. Cook until all sausage is browned (5-7 minutes). Remove sausage from the pan and place on paper towels to remove excess fat. Set aside.
  2. Turn on instant pot and set to sauté. When pot is hot, add oil to the pot.
  3. When oil is heated, add the peppers, onion, and celery. Cook, stirring occasionally, for 5-7 minutes or until vegetables are soft ened and onion is slightly translucent. Add garlic and cook for 1 minute more. Turn instant pot off .
  4. Add salt, pepper, rice, and cooked sausage. Stir to combine. Add chicken stock, Worcestershire sauce, cajun seasoning, bay leaves, and cilantro. Stir to combine.
  5. Add lid to instant pot and turn it on. Set the pot manually to 5 minutes.
  6. Aft er the pot has built enough pressure and cooked for 5 minutes allow the pressure to release naturally for 5 more minutes before quick releasing the remaining pressure. Remove the lid. Toss the rice to mix before serving.
