Pressure Cooker Dirty Rice

What You Need
- 1 pound bulk sausage
- 1 tablespoon olive oil
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 medium onion, diced
- 3 ribs Dandy® celery, diced
- 4 cloves garlic, minced
- salt & black pepper to taste
- 1½ cups long grain white rice
- 1½ chicken stock
- ¼ cup Worcestershire sauce
- 1 tablespoon cajun seasoning
- 2 bay leaves
- ¼ cup chopped cilantro
Make It
- Add sausage to a skillet and place over medium heat. Cook until all sausage is browned (5-7 minutes). Remove sausage from the pan and place on paper towels to remove excess fat. Set aside.
- Turn on instant pot and set to sauté. When pot is hot, add oil to the pot.
- When oil is heated, add the peppers, onion, and celery. Cook, stirring occasionally, for 5-7 minutes or until vegetables are soft ened and onion is slightly translucent. Add garlic and cook for 1 minute more. Turn instant pot off .
- Add salt, pepper, rice, and cooked sausage. Stir to combine. Add chicken stock, Worcestershire sauce, cajun seasoning, bay leaves, and cilantro. Stir to combine.
- Add lid to instant pot and turn it on. Set the pot manually to 5 minutes.
- Aft er the pot has built enough pressure and cooked for 5 minutes allow the pressure to release naturally for 5 more minutes before quick releasing the remaining pressure. Remove the lid. Toss the rice to mix before serving.
