What You Need

  • 1 lb Yukon Gold potatoes, chopped
  • 2 tbsp butter
  • 1/4 cup 35% heavy cream
  • 1/4 tsp each salt and pepper
  • 1 cup leftover turkey gravy
  • 1 cup shredded leftover turkey
  • 2 cobs Dandy® Sweet Corn, kernels removed and cooked
  • 1 cup leftover turkey stuffing, heated
  • 1/4 cup cranberry sauce
  • 2 tbsp finely chopped fresh parsley

Make It

Directions:

  1. In large pot of boiling salted water, cook potatoes for about 20 minutes or until tender; drain well. Mash potatoes, butter, cream, salt and pepper until smooth.
  1. Meanwhile, heat gravy in saucepan set over medium-high heat until boiling; stir in turkey. Reduce heat to medium-low; cook for 5 to 8 minutes or until turkey is heated through.
  1. In 4 parfait bowls or Mason jars, layer half of the mashed potatoes, half of the corn, stuffing, pulled turkey, cranberry sauce, remaining corn and remaining potatoes. Sprinkle with parsley.

 Tip: For a festive touch, add leftover sweet potato casserole if desired. If you don’t have any leftovers, pierce a sweet potato several times with a fork. Microwave on High for 8 to 10 minutes or until fork-tender; mash with a little butter and brown sugar. Season with salt and pepper.
