Dandy Celery, Apple, Pecorino Salad

YIELD
Serves 2-4

What You Need

Salad:
  • 1 pkg Dandy Celery Sticks (cut on bias, ¼ inch thick)
  • 1 each Pink Lady Apple, or Gala Apple, (sliced thin)
  • 1/4 C. Picked Parsley leaves
  • 3 oz. Hard cheese, like Parmesan, or Aged Pecorino
  • 3 oz. Salted roasted Marcona Almonds

Dressing:

  • 1/4 C. Mayonnaise
  • 2 T. Extra virgin olive oil
  • 2 T. Cider Vinegar
  • 2 T. Agave Syrup
  • Zest and Juice of 1 Orange
  • 2 t. Kosher salt
  • 1 t. Cracked black pepper

Make It

  1. In a medium bowl combine the celery, apples, and parsley leaves. 

     

  2. In a mason jar fitted with a lid combine the mayonnaise, olive oil, vinegar,  agave syrup, orange zest and juice, salt and pepper; shake to combine.

  3. Pour over the Dandy Celery salad , toss well and serve with crushed Marcona Almonds and cheese grated over the top.

  4. So simple, So delicious. Serve with a grilled piece of meat or as a side to a roasted dish. Great on a pulled pork sandwich or simply as the main event.
