Dandy Sweet Corn Couscous with Feta Cheese

What You Need

  • 3 cobs Dandy® Sweet Corn
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 2 tbsp minced shallot
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cups cooked couscous
  • 1 cup pea shoots or alfalfa sprouts
  • 1/2 cup fresh shelled peas, cooked
  • 4 radishes, thinly sliced
  • 1 tbsp finely chopped fresh mint
  • 1 tbsp finely chopped fresh chives
  • 1/4 cup finely crumbled feta cheese

Make It

  1. Preheat grill to medium heat; grease grate well. Grill Dandy Sweet Corn for 15 to 18 minutes or until grill-marked and tender. Let cool slightly. Remove kernels from cobs.
  2. Meanwhile, whisk together oil, vinegar, shallot, mustard, honey, salt and pepper until blended. Toss couscous with vinaigrette; stir in corn, pea shoots, peas, radishes, mint and chives. Sprinkle with feta.


  • Substitute baby spinach or arugula for pea shoots if desired.
  • Substitute goat cheese for feta cheese if desired.
